Carrot Cake with Chocolate Icing

Ingredients:
– 4 medium carrots, peeled and chopped (approximately 400g) – 1 cup of oil – 4 eggs – 1 cup of sugar – 3 cups of unleavened wheat flour – 1 tablespoon of chemical baking powder
CHOCOLATE TOPPING: – 2 tablespoons of unsalted butter or margarine – 1 cup of sugar tea – 1 cup of powdered chocolate – 50 ml of milk (6 tablespoons)
How to make:
1 – In the blender, add 4 peeled and chopped carrots, 1 cup of oil and 4 eggs, beat well until smooth.
2 – Pour the dough on a platter, add 1 cup of sugar and mix well with a whisk or spoon.
3 – Gradually add 3 cups of wheat flour and continue mixing.
4 – Add 1 tablespoon of chemical baking powder and stir well.
5 – Let the dough rest for 10 minutes.
6 – Pour the dough into an already greased and infarinhada shape.
7 – Place in the oven, preheated to 180° for 45 minutes.
Roof:
8 – In a pan, add, 2 tablespoons of unsalted butter, 1 cup of sugar tea, 1 cup of powdered chocolate and 50ml. of whole milk. Stir well to avoid lumps and until the chocolate melts.
9 – Pour the chocolate frosting on the cake and let it cool, until the frosting is hard.
