This Garlic Chicken Fried Rice is a quick, delicious dish that’s perfect for busy weeknights or when you’re craving comfort food. Packed with juicy chicken, aromatic garlic, and perfectly seasoned rice, it’s a hit every time!
Ingredients:
-2 cups cooked rice (day-old works best)
-1 lb chicken breast, cut into small cubes
-4 cloves garlic, minced
-2 eggs, lightly beaten
-1/2 cup frozen peas and carrots mix
-3 green onions, sliced
3 tbsp soy sauce
1 tbsp oyster sauce (optional for extra flavor)
1 tbsp sesame oil
2 tbsp vegetable oil
Salt and pepper to taste
Directions:
Prepare your ingredients:
Make sure the rice is cold or room temperature to prevent it from getting mushy. Cube the chicken, mince the garlic, and slice the green onions.
Cook the chicken:
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken cubes, season with salt and pepper, and cook for 5-7 minutes until golden and fully cooked. Remove the chicken and set aside.
Scramble the eggs:
In the same skillet, add a bit more oil if needed. Pour in the beaten eggs and scramble them. Once cooked, push them to one side of the skillet.
Sauté the garlic:
Add the remaining tablespoon of vegetable oil to the skillet, then toss in the minced garlic. Stir-fry it for about 30 seconds until fragrant.
Cook the veggies:
Add the peas and carrots to the skillet. Stir-fry them for about 2 minutes until they’re heated through.
Combine the rice:
Add the cooked rice to the skillet. Break up any clumps with a spatula and toss everything together.
Season the rice:
Pour in the soy sauce, oyster sauce (if using), and sesame oil. Stir everything well to coat the rice evenly.
Add the chicken back:
Toss the cooked chicken and scrambled eggs back into the skillet. Stir to combine.
Finish with green onions:
Sprinkle in the sliced green onions and give the fried rice one final toss.
