How to make pickled potatoes

– 1 teaspoon of salt
– 1/2 teaspoon of black pepper

Instructions:

In a pot, place the baby potatoes and add enough water to cover them.
Cook the potatoes over high heat for fifteen minutes until they become very soft. Then, set them aside.
In a bowl, combine 1 cup of water, vinegar, olive oil, chopped onion, chopped red bell pepper, chopped garlic, dried parsley, salt, and black pepper. Mix well.
Drain the water from the cooked potatoes and pierce each potato with a toothpick.
Place the potato mixture in a glass jar, layering the potatoes with the marinade.
Cover the jar and set it aside for three hours to allow the flavors to develop.
