Pickled Coleslaw

This healthy and delicious coleslaw is perfect to add a special touch to your dishes and provide an explosion of flavors. Let’s get started!

Ingredients:

– 1 small cabbage
– 2 carrots
– 1 red bell pepper
– 3 glass jars
– 3 tablespoons coarse salt
– 3 tablespoons minced garlic
– 1.5 cups water
– 1 lemon

Instructions:

Peel and finely slice the cabbage using a peeler. Place it in a bowl.
Grate the carrots and add them to the bowl with the cabbage.
Cut the red bell pepper in half, remove the seeds, and slice it into thin strips. Add it to the cabbage and carrots.
Mix the ingredients in the bowl using two forks.
Distribute the mixture into the 3 glass jars.
In each jar, add 1 tablespoon of coarse salt, 1 tablespoon of minced garlic, and 1/2 cup of water.
Cut the Sicilian lemon into slices and place 2 slices in each jar.
Seal the jars well and mix again.
Refrigerate and let it preserve for 3 hours.
After this period, your coleslaw will be ready to be enjoyed. Serve it as a refreshing side dish with your meals!
