Potatoes, Eggs and Melted Cheese

This recipe is delicious! Potatoes, eggs and melted cheese combine perfectly to create a simple and delicious dish.

Ingredients:

– 4 potatoes, peeled
– 1 teaspoon salt
– Oil for frying the potatoes (enough to cover)
– 1 tablespoon butter
– 3 tablespoons minced garlic
– Half red bell pepper, diced
– Half yellow bell pepper, diced
– 1 teaspoon paprika
– Black pepper to taste
– 1/2 teaspoon dried parsley
– 3 eggs, boiled for 15 minutes, peeled, and cut into small pieces
– Approximately 1 1/2 cups shredded mozzarella cheese
– Oregano to taste

Instructions:

Cut the potatoes into strips and then into cubes. Season with 1 teaspoon of salt and mix well.
In a skillet, heat enough oil to cover the potatoes. Fry the potatoes until golden brown on all sides. Remove and place on paper towels to remove excess oil. Set aside.
In the same skillet, add the butter and let it melt. Then add the minced garlic and cook for 2 minutes until golden.
Add the diced red and yellow bell peppers, paprika, black pepper, and dried parsley. Mix well and cook for 3 minutes.
Add the reserved potatoes and mix.
Add the boiled eggs cut into small pieces and mix well.
Cook for another 3 minutes over low heat.
Finally, sprinkle the shredded mozzarella cheese over the potatoes and sprinkle with oregano to taste.
Wait for the cheese to melt and your meal will be ready to serve!
