Romeo and Juliet Cornmeal Cake

Delicious recipe for Romeo e Julieta cornmeal cake, the famous guava cake with cheese. Irresistible.

Ingredients:

– 3 whole free-range eggs – 1 cup of sugar – 1 ½ of unleavened wheat flour – 1 ½ of cornmeal – 1 cup of oil – 1 cup of milk – 1 tablespoon of chemical baking powder – 430g. of guava – 100ml. of water – 100g. grated mozzarella.

How to make:

1 – In a container, add 3 free-range eggs, 1 cup of sugar and beat well with the mixer on minimum speed for 3 minutes.

2 – Add 1 and a half cups of sifted unleavened wheat flour, 1 cup of sifted cornmeal, 1 cup of oil and 1 cup of milk. Beat again, until the dough is very homogeneous.

3 – Add 1 tablespoon of chemical baking powder and mix with a spoon or whisk.

4 – Pour the dough into an aluminum shape (size 20 cm in diameter by 9 cm in height) already greased with margarine and floured with cornmeal.

5 – Cut the guava into cubes and flour with cornmeal. Add the cubes to the dough.

6 – Place in oven preheated to 180° for 50 minutes.

7 – In a pan add 250g of guava cut into cubes, and 100ml of water little by little, stir well until it turns into a syrup, not too thick.

8 – Let the syrup and the cake cool at room temperature.

9 – Pour the syrup over the cake.

10 – Add 100g of grated mozzarella over the cake.
